If you are searching for good vegetarian recipes, here is a delicious and heart healthy bean and mushroom burger to add to your collection. These healthy, low fat burgers served with salad, pita bread and your favorite condiments make a substantial meal.

1 TBSP olive oil

1 small onion, finely chopped

1 garlic glove, crushed

1 teaspoon ground cumin

1 teaspoon ground coriander

1/4 teaspoon ground turmeric

1 & 1/2cups finely chopped mushrooms of choice

1 14 oz. can red kidney beans

2 TBSP chopped fresh cilantro

whole wheat flour (optional

olive oil for brushing

salt and black pepper

Heat oil in a wide pan and fry the onion until soft. Add garlic and fry 1 minute. Add spices and cook another minute, stirring constantly.

Add mushrooms and cook, stirring, until softened and dry. Remove from heat. Drain the beans thoroughly and mash with a fork or potato masher

Stir into pan with the fresh cilantro mixing thoroughly . Season well with salt and pepper. Using floured hands, form the burgers into four flat burger shapes. If the mixture is too sticky to handle, mix in a little flour. Brush the burgers with oil and cook on a grill or griddle for 8-10 minutes, turning once until golden brown. Serve with toasted pita bread, your favorite condiments and a crisp green salad.
