Garden to table 02-08-17

I really enjoy fruit desserts and this recipe is one of my favorites. It makes a quick, beautiful, elegant and delicious ending to a meal. I hope you will try it and enjoy it as much as we do.

1 ripe pineapple (a ripe pineapple should smell sweet and yield to firm pressure from your thumbs)

2 TBSP. butter

fresh strawberries, washed and sliced to serve

For the sauce

1 egg

2 egg yolks

2 TBSP sugar

2 TBSP dark rum

Remove the top and bottom from the pineapple with a serrated knife. Pare away the outer skin from top to bottom, remove the core and cut into slices. Preheat the broiler in your oven. Place pineapple slices onto a foil lined pan and dot with butter. Broil for about 5 minutes, being careful not to burn. To make the sauce, place ingredients into a bowl and set over a saucepan of simmering water. Whisk with a hand-held mixer for about 3-4 minutes or until foamy and cooked.. Divide the pineapple between 4 dessert dishes, sprinkle with strawberries and pour the sauce over the fruit.
