This time of year with all the business that Christmas creates, its wonderful to have some quick casseroles to feed the family or any visitors you may have. 

I have a collection of cast iron skillets and they are the perfect vehicle for those casseroles.  What can be better than a one-pot-dish?  This would be a perfect brunch or breakfast dish for Christmas morning.  Of course, if you don’t own any cast iron, any casserole dish would work well.

1 TBSP. olive oil
5 cups frozen, shredded hash
brown potatoes
2 cups sliced, smoked sausage
1  6 - ounce bag baby spinach
5 large eggs
2 cups half and half
1 cup cheddar cheese, shredded and
1/2 cup sour cream
1 &1/2 tsp. salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper

Preheat the oven to 450 degrees and place a 12 inch iron skillet in the oven.  When oven reaches temperature, carefully remove the skillet.  Add oil and hash browns to the skillet and top with the sausage.  Bake for 15 minutes and remove from oven. Reduce oven to 350 degrees.  In a medium microwave-safe bowl, combine spinach and 2 Tablespoons of water.  Cover tightly with plastic wrap and microwave for 2 minutes. Drain and squeeze as much liquid from the spinach as possible. Sprinkle spinach over sausage in the skillet.  In a large bowl, whisk together eggs, half and half, 1/2 the cheese, sour cream and seasonings.  Pour over spinach and top with remaining cheese. Bake until center is set  20-25 minutes.  Let cool 5-10 minutes before serving.
