I realize this will come out in print after St. Patrick’s day has come and gone, but it is a tasty dish no matter when you eat it. Economical and inexpensive to make, shepherd’s pie is one of our favorites.

When I lived in Ireland, I worked one summer on an organic farm.  The owner raised goats and milked them to make cheeses, both soft and hard.
