Here is a quick meal that is good enough for week nights or Sunday dinner.  Just pair it with your family’s favorite steamed veggies and baked sweet potatoes for a delicious and balanced meal.

1 1# pork tenderloin
salt and pepper to taste
1 lime, juiced
1 Tablespoon fresh ginger, finely grated
1 Tablespoon sesame oil
1 cup apricot or peach preserves
1/4 cup rice vinegar
1 Tablespoon cilantro, coarsely chopped

1. Cut pork into four equal pieces and sprinkle with salt and pepper.
2. Preheat a large, nonstick saute’ pan on medium high heat. Place oil in pan, then add pork. Cook 3-4 minutes, turning often, or until browned.
3. Remove pan from heat and stir in preserves, vinegar, ginger, and lime juice.  Return pan to heat. Cook 5-7 minutes, stirring often, while turning pork to coat.  Cook until pork reaches 145 degrees on a meat thermometer and the sauce thickens.  Sprinkle cilantro over pork and serve sauce on the side.  Serve with basmati rice and a salad.
